Apple Cobbler and a Snacky Dinner

Hello bloggies!!!!

I hope you all enjoyed a wonderful day filled with sunshine!!!!

I had a ton of apples going to waste in my refrigerator, I knew I had to think up something fast. I tried to feed some to my youngest daughter, but she turned her nose up at them and told me they were pithy. I had three different types of apples, Gala, Granny Smith, and Macintosh, I knew they would make a wonderful cobbler!!!
You can get away with more when you make a cobbler in my opinion. Apples need to be hard and firm when making a pie, but cobblers doesn't need to hold up a top crust, and the bonuses of cobbler is you want the topping to creep down into the filling!!!!

For dinner I didn't really want anything heavy, just maybe a snacky munchy kinda thing.. I threw together a fast guacamole, a spanish rice and a small layered dip with some homemade tortilla chips.

Spanish Rice:

3 cups cooked Jasmine Rice

1 1/2 cup fresh chopped tomatoes

1/2 fresh jalapeno pepper, diced fine

2/3 cup salsa

Dash chile powder, probably a quarter teaspoon

Dash of cumin, probably a half a teaspoon

In a large pot ( I used my rice cooker pot) add the tomato and the jalapeno, then your seasonings. add salsa. Mix together and heat. This is super easy and yummy too!

Here are all the apples in my fridge...I thought they looked pretty by my cup of coffee.

Sliced apples
Cinnamon apples with raisins
20 apples, peeled, cored and sliced thin
A large handful of raisins
1 1/3 cup sugar
3 tbls. cinnamon
1/3 cup flour, this is to soak up some of the juice
Mix all together and place in a 9x13 baking pan sprayed with pam spray. Make Stuesel topping..
1/2 cup oatmeal
1/2 cup flour
1 tbls. cinnamon
1 cup earth balance
1 cup cane sugar
1 tbls. molasses
Mix everything together and sprinkle over your apples with your fingers.
Place a large baking sheet under your dish, because this is gonna drip some.
Bake for 1 hour. Remove from oven and let cool... Let it cool.
If you eat it now you will burn your tongue, you won't taste for a week and you will sound like you have a speech impediment....Theriously............

OH MY GOSH! I am drooling over the rice and the cobbler! I have been raw for 3 months, but starting to add in some cooked vegan stuff...I am SO making that rice and this apple cobbler.

Are the tortilla chips flour?
Can you tell I am starving right now! haha - I am trying to drop a few pounds so I am watching it. Yes I have to watch it on the Raw diet...that sucks! But I have hit a plateau!

The tortila chips are flour....but any would work, I also fried them...oops, I know I know, so bad for me...sigh..
I thought the rice was the bomb! I usually follow my best friends recipe, but I got a wild hair I guess and threw in some fresh stuff with the usual stuff. It was perfect...for me...lol
I forgot to add the raisins in the recipe, I used a big handful, and I never measure anything for pies and cobblers they are guesses of what went in it....Everything else is measured though..:)

Jasmine rice in my opinion is the queen of rice, if you haven't tried it yet you should, it realy makes flavors pop!! I really hope you do ok on some cooked food, I hear it can be brutal after being raw to incorporate cooked back in.

I love your snacky dinner. I eat things like that all the time too. Thanks also for sharing the Spanish rice. I never think to make that but it is great dish that is packed with flavor and nutrition that I should make more often.

Great idea to make a cobbler with the three types of apples. I feel like I can taste it from your pics and recipe.

Alicia, I love that you said you feel like you can taste my food, that makes me feel great! I try to take really good pictures, but I didn't know if I was succeeding, now I have hope that people can see the food...lol
