Breakfast for Dinner?

I was seriously craving breakfast tonight. I normally am not a breakfast girl. There has never been anything I had to eat weekly. Well that is not true, I adore fruit and I always craved it especially when I was a meat eater. I do not think there is a fruit I don't like.
Anyway back to tonight's dinner. I wanted biscuits and gravy so here it is.....

I love, love, love....Oven potatoes with onions! So good with anything, I make it all the time!

5 Potatoes, washed and chopped

1 medium onion, chopped

Oil to coat

salt and pepper to taste

Preheat oven to 450 degrees, toss your potatoes and onions with oil. Season with your salt and pepper. Bake for about 20-40 minutes.

Vegan sausage anyone? I found a recipe for sausage crumbles on VegWeb.com. a long time ago. It was OK, but it still wasn't what I wanted it, I could not help myself, I changed it to suit my tastes

Sausage Crumbles
Ingredients:
2 tablespoons soy sauce
1 teaspoon Poultry seasoning
1 teaspoon onion powder
1/2 teaspoon Organic all purpose seasoning
1/4 teaspoon garlic powder
1/2 teaspoon fennel seeds
1/4 teaspoon Red pepper flakes
1/4 teaspoon black pepper
salt to taste
1 tsp. Maple syrup
1 tsp. Liquid smoke
1 cup boiling water
1 cup textured soy protein
2-3 tablespoons extra virgin olive oil

Directions:
In a bowl mix together the first eleven ingredients. Bring water to a boil and pour over mixture.
Pour in the textured soy protein, mix with a fork, and let stand for 10 minutes. Fluff with a fork. Taste to see if more seasonings need to be added.
Put oil in a frying pan over medium heat. Add mixture, and fry until well browned. (you may need to add extra oil if the pan becomes too dry).
This makes a ton, there is no way I would use all of it in the gravy, so I make it when I am going to make pizza one the weekend
Serves: yield: 1 1/2 cups
Preparation time: 20 minutes

Biscuits
Ingredients:
2 cups flour
1 tbsp baking powder
1/2 tsp salt
4 tbsp margarine
3/4 cup soy milk

Pre-heat the oven to 450 degrees.
Put all the dry ingredients into a bowl. Using a fork, blend the margarine into the dry ingredients until the mixture breaks down into fine particles.
Add the soy milk and stir until the particles cling together. I make drop biscuits, but feel free to roll them out. Bake for 12 minutes.
White Cream Gravy
Ingredients:
1 Tbls. oil
1/4 cup Flour
1 cup Rice milk
2 1/2 cups Soy milk
1-2 Tsp. Black pepper, cracked pepper is the best
Salt to taste

Heat oil in a large skillet add flour and make a roux. slowly add your milk until creamy and thick. Add your pepper and salt to taste. This will make alot of creamy gravy. If you like you can add your sausage crumbles at any time, but I added mine in last

I can't wait to visit you, Brandi, and try out your delicious cooking! It all looks so good! I can almost smell it!

I had potatoes tonight too! I wrapped them up in tin foil and baked them. When they were done I let them cool, then chopped them up and added them to a spinach and sprout salad! I seasoned everything with Braggs (soy sauce), lemon juice, and olive oil. I added tomatoes, avocados, and cucumbers to the mix as well! It was good! I didn't think is was "recipe" worthy for my blog, but perhaps I'm wrong... Maybe I should give my little meals a little more credit. Yours are so awesome. Mine can't compete. But it's not a competition! I guess I don't feel like a star chef, but I'm learning. :)

Your food looks amazing! I have to admit, cooked potatoes are my weakness in my predominately raw diet - there's just no substitute. Just another idea for your sausage crumbles, in case you ever get sick of TVP. Try freezing, and then defrosting firm tofu, and use that as your crumbles. Something about freezing and defrosting tofu really changes its texture. I remember once I made a meat sauce for pasta using frozen and thawed tofu, and it came out very mince-like. One day DH ate the leftovers and he had no idea (until I told him) that it wasn't meat! Ciao

That is a brilliant idea, Raw Oz Gal!!! I will try that! Do you eat a diet of 75% raw to 25% cooked? That way you can enjoy your potatoes too!!!
Valerie, I would have posted that!! It sounds simple and delicious, and most people would like something easy on a weeknight!!!!

I love oven-baked potatoes with onions too! I eat potatoes like this frequently because it'd the ultimate comfort food. Sweet potatoes are good made like this too, and a bit healthier.
