"Chicken" Enchilada's
1 Pkg. Morning star Chicken strips, cut into small pieces
2 Cans green chile enchilada sauce
1 can green chiles
3 roma tomatoes, diced
2 cups teese, I used mozz and cheddar flavors
1/2 can black olives
Preheat oven to 350 degrees
Spray a 9x13 baking dish with PAM, pour half a can of enchilada sauce on the bottom and swirl aound until it covers all. Place 6 taco sized flour tortilla's down.
In a large bowl, chop chicken and add green chile's and two tomatoes. Add the other half of enchilada sauce and mix well. Add your chicken mixtue on top of tortilla's then tortilla. Continue layering adding some enchilada sauce on top of tortilla's to keep them soft. Your last layer should be tortilla's. Spread your remaining cheese over tortilla's top with your other tomato and black olives. Bake for 30 minutes. Serve with guacamole, salsa and sour cream.

Wow! Look at all that snow! The snow we got a few weeks ago has almost completely melted now! But what with that silly groundhog the other day seeing his shadow, I guess we'll still have a few weeks of winter, huh?! Blah.
