As you can see from this picture, I took Winston outside with me for awhile. He is such a good cat. He never wanders off and he goes back into the house without much ado (I only end up screaming 40 times, "Winston (menacing tone), Get in the house this instant!!!", as he sits right outside the door staring at me like THIS!
So, I wanted meatloaf tonight, it has been years since I have had one and sometimes your just crave things, so I hopped on the web and took off in search of a tvp meatloaf..I have tons of tvp, because I am basically the only one who likes it (unless I disguise it as taco filling for my husband).
I eventually stumbled upon The veggie table, it sounded simple and it said that it would please meat eaters too. Here is where you can find the original recipe. http://theveggietable.com/

I altered it of course, I honestly cannot help myself..
The original recipe called for regular tofu, I only had silken, and there were not enough flavors in it for my taste.. Well, you will see, Here is the recipe, my way.

Meatloaf
1¼ c veggie stock
1½ c ground TVP or seitan
1 onion, minced
2½ T olive oil
1½ c tomato sauce
3 oz tomato paste
3 shakes of vegan Worcestershire sauce
1 tsp. onion powder
1/4 tsp. Season salt, which ever you prefer
2 tsp. Simply organic all purpose seasoning
½ pound firm silken tofu
1 egg replacer
3 c. Panko bread crumbs
Directions
Preheat oven to 375.
Heat stock to a near boil, add TVP, I added some browning sauce, simmer until absorbed.
Meanwhile, heat 2 T olive oil and saute onions until transparent and golden, 3-5 minutes. Add TVP and continue cooking about 1 minute.
In the food processor, puree tomato sauce, tomato paste, Worcestershire, onion powder, season salt, all purpose seasoning, and tofu.
Combine TVP, tomato puree, and remaining ingredients. Lightly oil the bread pan, spread the "meat" loaf into it, patting into the corners. Make sure your pan is well greased.
Bake for 60 minutes, invert onto a baking sheet and then top with BBQ sauce and continue baking for 10 more minutes.
My daughter is getting married to a Chinese man who moved to America two years ago from China. He is a sushi chef at a lovely restaurant in Hutchinson, Kansas. They are planning a May wedding next year. Chris, does not speak English very well, which makes it interesting when they come home for dinner. Chris still holds the customs of China, and feels that he must buy his future wife's family presents ever times he comes to our house.
The first recipe I read...I wanted to make!!!
But now I have it!! It is mine......all mine.......!!!!!!
So I made Raspberry Oatmeal Bars!

Nice looking loaf! Thanks for sharing the recipe. I have been working on perfecting the texture issue of vegan meatless loaves so I really appreciate seeing what you did and hearing your thoughts.
I have The Joy of Vegan Baking but haven't made anything from it. As you know baking doesn't haven much at our house for health reasons.

Hey, I know this is the wrong post to comment, but I wanted you to see this for sure -- I care about bees! Honest! I read the very same article yesterday and discussed it over dinner with my husband. We've been worried about bees for about a year or so since our local public television station aired a program on their dwindling numbers. We need those little guys. I'm right there with ya.
Those things are evil, in a good way! I have to make it a point not to try to look at your blog late at night, for the simple reason the pics look good enough to eat. I am sure the foods were too!

I'm really going to have to try this meatloaf recipe. Looks really great and easy. I have all of those ingredients already too - no excuse right?! And the oatmeal bars...I'm drooling. I could do some damage with those. Definitely my kind of dessert.
Aww, Winston is just darling! It's funny how the pets loose their sense of hearing when it is time to come in the house ;-)

The "meat loaf" looks great! I haven't had anything like that in way too long. It's so sweet that your daughter's fiancée brings your presents. It seems like he must know you well considering his choices. And a sushi chef! I hope he knows how to prepare some good veggie options :)

Heather, this loaf, is not the best I have ever had, but the texture was spot on and it was moist, two things I prize in a dish besides flavor!
Janet, Winston is the worst and best cat I have ever had! He doesn't meow, he pff's, it is the wierdest thing, he can meow, he just chooses not too.
Jill! Chris makes me the absolute best california rolls, with pickled daikon radish and paper thin cucumber!~ So delish!
I haven't had his teriyaki nodles yet, but Emma says they are to die for! He also works the grill, and flips shrimp etc.!!

Have you tried lentils in your loaf? I have also heard of a potato loaf, that seriously peeked my curiosity, a few years ago!
With your healthy way of eating, do you ever splurge and eat something terrible for you, like once a year?? lol

I made a lentil loaf about two weeks ago. The texture just wasn't right. Potato is an interesting idea. Thanks for sharing it, I will keep it in mind.
We do splurge occassionally but not too often. That was our trip to the MiniBar on New Years Eve.

I love vegan meatloaf so much. It's one of my favorite things that I hardly ever make. I'm glad you were able to finally get that cookbook! Someone also gave me a copy as a gift over a year ago, but with so many great recipe sources available online and in book form, I still haven't tried many from The Joy of Vegan Cooking. I'll have to try those Raspberry Oatmeal Bars--they look fantastic! I liked the Chocolate Cake with Chocolate Buttercream (of course!) but I think everyone's overall favorites so far are the Strawberry Cupcakes.
Tiffany, The strawberry cupcakes were my second choice!!! With Easter coming up I kept thinking Cupcakes with edible flowers!!!
You are so cute, Brandi! Nooch? Is that what nutritional yeast is called? :) Jordan and I always call it nut yeast, which is entirely misleading. But we know what each other means. :) But you hate it, huh. That's okay. We all have affinities for different tastes.
