Ok, that is not completely true. I did go to Newton, Kansas to the Dollar Tree, and yes, everything is a dollar!~
I bought a lot of random stuff, like pedometers and candle lighters, but I also bought 1 margarita glass for the soul purpose of staging my food! I also bought a soup mug and a shallow soup bowl that I will soon fill with tortilla soup!
So are you ready to see the margarita glass? Oh the suspense!!!!

I filled it with Pico de gallo!!! SO cute! I cannot wait to make my Three citrus vegan Ceviche!!!! That is the real reason I bought this!! Yummy!
So I wanted a fast dinner, and what is faster than mexican food, right?Open a can, chop some things up! Supper in 30 minutes or less, depending on how fast you are with a knife!

So tonight I made Bean tostada's, with fresh pico de gallo and some sliced avocado, super fast, super good, nice protein count and it would be great for raw's too, just get rid of the beans and torilla and have an al fresco salad, that is totally refreshing!I really don't think you need a recipe for this, but.....
open a can of refried beans

chop some avocado
shred some romaine (use romaine, it tastes better and it is better for you than icky, old, plain white iceberg...)
Place a spoonful of beans on tostada, top with romaine lettuce, then pico de gallo, and serve with chopped avocado...done..(Oh, heat your beans)
This is a major tostada, you can try and pick it up, but honestly it is a bit of a chore. I do kind of a rip, slice thing and then I eat it!

I think this is the fastest dinner to make it took me all of 20 minutes to throw it all together, and it wasw satisfying and yummy.
I just loved the margarita glass, I was shopping with my friend and I said "Look at that Margarita glass!" and the my friend goes,"it is pretty, would you make margarita's tonight?" I said "Heck NO, I am gonna make Tofu Ceviche, and put in in that glass!" my friend just shook her head and walked off.... :)
