This is just a short post, but I wanted to let you know about the Chickpea Cutlets I made from Veganomicon last week.
I really thought these were easy to make. It took no time at all to mix everything together and then fry it.
The texture wasn't what I thought it was going to be, I figured with the vital wheat gluten it would be more meat like, which it wasn't.. It reminded me of mashed potato cakes, which is a good thing, when you want something comforting and a bad thing when you want something meaty.
I will make these again, but in my typical style I am going to tweek it and mix it up!!! This weekend I am going to make a new cutlet with some idea's that were kicking around while we ate them for dinner!!!
Pretty simple dinner, Chickpea cutlets, baked potato and beets. I topped my cutlet with some Heinz 57 sauce....
Tonight since Kait and I are both sick, I am going to make "chicken" noodle soup and a side of mashed potato's for myself, just because I think it sounds soothing.......

I like the cutlets even better baked and made into a "chicken sandwich" with some veganaise, crispy lettuce, and tomato!
I also prefer the cutlets baked. But I am with you the texture wasn't what I expected either.
BTW, no way could I be so organized with the menu. To me it is amazing that you can do that. I change my mind a hald dozen times before I settle on a meal. Apparently I am just fickle I guess. ;)

I will definately try it baked!! I can't wait to try it with some vegenaise, lettuce and tomato!!!
Alicia, it has taken me years to get this organized, I use to eat out 5 times a week, and never had any idea what to cook for dinner, until I was at a grocery store...lol
Chris and I use to have foster children and when feeding a family of 9 you have to have a plan!!
I guess it stuck because I still do it for our family of 3 now....although I do vier off the plan quite often when it is just Kaiti and I eating, like tonight, we were suppose to be eating pizza, but instead I am making soup.. I ahte being sick!

Food and I have a strange "relationship". I am hyper organized in other areas. But not when it comes to food for some reason I seem to crave freedom in regard to meal planning. It is one of my quirks. ;)
Cooking for 9. Woo! That is completely beyond my comprehension. No wonder you had to get organized.

I have really started to savor chickpeas! They are good in everything! And I bet Isa has lots of yummy recipes! Maybe I should get her book at the library and try some of them out!
