How is your day going????? I am having a really good day!!!! Chris and I swept floors today and dusted....super exciting isn't it!!!! Yes, envy us and our house work......Mwahahahahahaha!!!!!
I am a little hyper today, if you couldn't tell! I think it is the sunshine and the promise of spring being right around the corner!!!!
Last night Emma came over and we played Guitar hero for quite awhile...It was fun!
Emma was here for lunch today so I decided to make some oven potatoes....
Chris is a meat eater and Emma has gone back to her meat eating ways so I made them oven potato's with smoked sausage and Kaiti and I had smart bacon in ours!!! It was so yummy!
Here is the recipe!!!
2 lbs. Yukon Gold potato's, washed and cut into a large dice
1 Large yellow onion, chopped
2 Large green peppers, chopped
1 Jalapeno, seeded and finely diced
4 strips smart bacon, chopped
Olive Oil to coat
Salt and pepper to taste
Vegan cheese of your choice, optional
Tofutti sour cream, optional
Chopped avocado, optional
Preheat your oven to 450 degree's
Wash potatoes, and cut into a large dice, chop your green peppers and jalapenos, place on a large baking sheet and coat with olive oil. Season with salt and pepper. Place in oven and bake for 20 minutes, remove and turn, to get an even brown on all sides. Bake an additional 15 minutes. Chop your bacon, and add it into your potato mixture, then top with vegan cheese if you are using any. Bake until cheese just melts. Top with sour cream and avocado!!! This was really easy and super tasty!!!! Topped with smart bacon!

okay your food recipes and pics are like crack to me! STOP IT!!! I have had some roasted potatoes twice since being raw and they taste better than chocolate right now...I swear I could manage to gain a zillion pounds if I was eating all cooked vegan foods! YUM! Housework? YUK - just spent $60 on a new vaccum and it was a piece o crap so got another one for $170 and it works great...but I got to see all the yuk in my carpets
