Banana Walnut Pancakes

I love pancakes....I mean, I really.... really love pancakes. When I was an omni, not so much! It is strange how many things I do like now that I am a vegan.
I hated chickpeas, now I love them, abhorred portobello mushrooms......and still do. LOL
I woke up this morning with a to do list running through my head. I managed to get Kaiti off to school with lunch in hand, put on some coffee and hopped on the computer to do some reading. After I was finished with my morning catch up of current events, I woke my husband and went downstairs.
I do not know what triggered me to make banana walnut pancakes, but I am glad I did.

They were perfectly fluffy, with the sweet tanginess of the banana and the sharp velvety bite of the walnuts. We topped ours with a pecan maple syrup!
The cup of black coffee made it happen, cap'n!

I hope all of you are spending time with the one you love and eating a huge stack of pancakes!!!!

The pancakes look good. I used to like mine with peanut butter, agave and bananas.

I am glad you like them, I never thought of agave as pancake syrup, but it makes perfect sense!!!!

You know I love pancakes too! You seem to be making lots of things I like, lately! But then again, your meals never fail to tempt me! Keep cooking, Brandi! You are so good at it! Love you! :)
