Buffalo Chicken Salad Pizza

Oh pizza...I love you!!!! Doo doo do to do!!!

Do you like my song??? I wrote it just for you!!!
I have been kicking around the idea of buffalo chicken pizza for awhile.
I love buffalo wing sauce and it is simple to make, so we eat it alot~! I often make a buffalo chicken wrap with sauce and ranch dressing in a spinach tortilla...umm...yum!
So, I said to myself "self, you should make a buffalo chicken salad pizza!".....and I did.....

On to the pics!
Spread cornmeal down on your counter and shape your pizza dough, place it over a round pizza pan, this one is about a 20 inch pan. Let the edges hang over so you can make the crust edging.
Marinate some Morning Star chicken strips in buffalo sauce....about 1/4 cup

Wing sauce:
1 bottle Texas Pete hot sauce
2 tbls. vegan margarine
In a sauce pan melt the margarine into the sauce set aside to cool.

Spread the buffalo sauce over the crust, using as much sauce as you like. Top with marinated chicken strips.
Shred 1/2 pkg. Vegan Gourmet mozzarella cheese over pizza and then top with about a cup of Vegan Gourmet cheddar.


Fold the edges of the crust over to make a pretty design and then sprinkle on some scallions!
Bake for about 15 minutes @ 425 degree's. Remove from oven, turn down heat to 350 degrees. Cover pizza with foil, to just cover cheese (this helps it melt) and bake another 10-12 minutes.

Finished pizza, you can eat it like this, but what fun is there in that?
Top with finely shredded romaine and chopped fresh tomatoes, and then using a thin tipped squeeze bottle, in a zig zag pattern top with your favorite vegan ranch dressing.
Serve with some raw carrot and celery sticks and chow down!!!!





The review:
Ok, We seriously loved this pizza. I added to much wing sauce, so I would say about a cup would be good for a big pizza. It wasn't hot, it was saucey in the center...
I honeslty think meat eaters would be fooled by this. It startled me how close it was to the buffalo chicken pizza I used to eat.
My oldest daughter even asked if it was real meat...that says something!
I really loved the salad topping, it was easy to eat, believe it or not and once you got half way through the slice you could pick it up.

While it is not something you should eat every day, by keeping the margarine down to 2 tbls. and topping with salad, and of course just 2 cups of vegan gourmet, it isn't too bad on your waist line.
Now that I have made the Buffalo..I am making shredded bbq chicken next!!!!

My hubby loves to have his half of the pizza as a buffalo "chicken" style pizza. He's started just mixing together bbq sauce and hot sauce, omitting butter, topping with sauteed green bell peppers and onion and topping it all with blue cheese. I, however, prefer Greek style or just loaded with veggies.

Uh, YUMMM! I love pizza! What a great combo of pizza and salad. A shredded BBQ "chicken" version sounds equally tasty.

I do something like this too but use only the hot sauce and less of it. We also love salad on top of all types of pizza. Great dinner!
