I hope your Easter Weekend was brilliant and you spent time with someone you really love!
My weekend was busy, for Easter we moved Emma into her apartment, but more on that later...
My friend Valerie, is stalking my chicken enchilada recipe!!!
It makes me so happy she wants to make it so badly that I am making a post just for her with a picture and a link so she can make it!!!
Plus, while you are read this, it gives me time to actually go make something for dinner tonight!
I have not cooked for 9 days straight people....9 DAYS STRAIGHT!!!!
It is a little strange to hear that, even though I know it is accurate...WOW!
We got Emma in her apartment, her furniture was delivered for her living room this morning and she is happy and content in her spotless ( I cleaned it) Apartment!
And then I come home and it looks like Hurricane Katrina hit in here...Laundry piled up, dishes over flowing, house in disarray...NO NO, wait I got it....Hurricane Emma!!! She cannot just quietly move out, she must destroy every room between her bedroom to the laundry room....and here I am in the aftermath...she won't even come over to get the remaining things, because she knows I am going to make her take her dirty clothes and last boxes and force her to clean her mess up!
LOL, kids.....what a brat!

you know i was wondering the same thing! hwere is this recipe. although right now im trying o NOT get excited abuot to many recipes because my kitchen is only half finished, its a mess our fridge, oven and dishwasher are in the fam room and its liek chaos. lol i like chaos, i think im a little like your daughter in that regaurd. i *might* have done the same thing she did. so she moved close by?
Nine days, really? That seems crazy. You must have been swamped. I hope you get your house under control soon.

I bought some Teese the other day and haven't quite decided what to do with it yet...so maybe enchiladas are in order. :) I used to love enchiladas before becoming vegan and have never had a "cheesy" vegan version. Thanks for the inspiration!

Well, I think I've got everything that I need to make this except green chili sauce. I've never bought green chili sauce before. Is there a particular brand you like, or jar size?
