Banana Split Pancakes Anyone????
Banana Split Pancakes

Ingredients:
~
1 recipe of pancakes off of Heart Smart Bisquick box, using egg replacer for the egg
1 1/2 bananas, chopped
5-6 strawberries, hulled and sliced
1 cup mini vegan chocolate chips
1/2 cup chopped pecans
Make pancakes according to recipe.
Add fruit, chocolate chips, and nuts, mix well.
On a griddle over medium heat, pour about 1/2 cup of batter in a circular motion. Cook pancakes until bubbles start to form around edge, flip and continue until the pancake is cooked through, this will take a little longer than traditional pancakes due to the fruit ratio being so high.
Serve with margarine, real maple syrup or whipped cream... Delish!

How about "Egg Salad Sandwiches with a Balsamic Cucumber, Tomato Salad?
Normally I serve this on toasted dill rye bread, but when I saw these rye hoagie rolls, I had to try them! Topped with really fresh alfalfa sprouts, it was delicious!
I make my own brown sugar now...it is too simple not to make, and I can control the depth of flavors.
Finished brown sugar
Better than Sour Cream with addition of homemade brown sugar. Add a pinch of cinnamon or nutmeg and whip.
My Favorite "Egg" Salad
Ingredients:
1 pkg. Extra firm Tofu, pressed and cubed
1/2 c. Vegenaise
1 full tbls. Country dijon mustard
1 tbls. capers
1 tsp. dried dill
Cracked black pepper
Red sea salt
Cube your tofu and place in a bowl. Add the mayo, dijon mustard, and capers. Mix well. Add the dill, salt and pepper. Chill. When ready to use, Lightly toast your bread, add a good helping of salad and top with alfalfa sprouts!
Just a little tidbit, before going vegan, I never ate an egg salad sandwich...I hated them!

Back in my catering days I would often host small dinner parties. Most clients would want a heavier dinner with a light refreshing dessert. I came up with a wonderful dip using 3 ingredients..

Congratulations on your 100th post. Sadly no one was making those pancakes for me while I was in bed this morning. But I sure wish someone was! They look fantastic along with your brown sugar sour cream sauce. Actually everything looks delicious. Also, the lilacs are gorgeous.

Blessed Mama-my daughter switched back to veganism, thankfully! Plus I rarely ever posted vegetarian... :)
Lea- Take about 1/2 cup of vegan sour cream, add about a full tbls. "brown sugar" and a dash of cinnamon and whip it together, then just serve with fruit! So YUM!
ps...everyone should make the banana split pancakes!
