Hello...My name is Vivacious and I really do have a blog about cooking.....

Picture if you will a kitchen covered in Chinese to go boxes, ice tea cups, napkins, salad boxes, pizza boxes, and potato chip leavings....This is my life....oh and peanut butter and jelly sandwich plates, how could I forget that...especially since I have been living on them.

Remember the blog about healthy eating?......yeah....me neither...MOVING ON


So tonight I am home, in my own house (can you believe it?)....trying to decide what to make for dinner, and
Kaiti goes, "what about rice?" "RICE?" I said......"Just rice?" "Yep", says Kaiti...
"Yeah,ummm no, we need a little something extra in there kiddo" and off the the kitchen I dragged.....
Thankfully, I am always well stocked on veggies and I just bought a 5 lb. bag of organic carrots, for only $4.55. Yes, that is right, $4.55
Kaiti was hopping around me like a bed bug and going "what about broccoli...can we have broccoli....I love broccoli....can we, can we, can we!!!!" So a stir fry was born....

Kaitlynne's " I'm a bed bug" stir fry:

Ingredients:

5 large organic carrots, peeled and cut into 3 inch long strips

3 cups of broccoli crowns (feel free to use frozen or fresh, and use the whole stalk if you like)

3 garlic cloves, minced

1 large yellow onion, cut in half and then sliced thinly

1/2 pkg. Extra firm tofu, pressed and sliced thinly

1 tbls. sriracha hot sauce

1 tsp. red pepper flakes

1/2 tsp. onion powder

1/2 tsp. garlic powder

1/4-1/2 cup soy sauce or to taste

Slice all veggies and set aside. Heat your skillet over high heat with about 4 tablespoons olive oil until oil shimmers, add tofu slices and fry until brown. remove and drain well. Add onions and carrots, and stir, add sriracha sauce and make sure to coat the veggies well. Add the broccoli, spices, and soy sauce stir to combine. Cover with a lid for about 3 minutes.Top with reserved tofu and serve over Jasmine rice!!

This is so easy it took me all of 1o minutes to throw it together! Ha Ha take that Rachel Ray, In your face!!!! (just kidding...no, I am not....)

Finished dinner with some sriracha sauce on the side for garnish and dipping of tofu!!!
This was very filling and yummy. I think I would have enjoyed it more if my kitchen wasn't such a disaster area!!!
Tomorrow will be more centered, less laying around, less watching of HULU....I am doing my laundry and I ran a load of dishes, junk food is gone and in it's place are some lovely strawberries, kale and romaine.
I am so glad to be home and not shopping or moving furniture!!!!

I am toying with a roasted corn soup for tomorrow, tell me what you think!
Also, kale salad with oiless garlic/lemon dressing or Cheddar garlic biscuits to go with it....or both, you choose I will create, Sound like a deal?

Ah, the classic junk food stupor. I'd recognize it anywhere. I love the fact that Kaiti loves broccoli - so do two out of my three. And srirachi, yes!

Great job with the stir fry--it looks really tasty! Sometimes veggies and rice are just the things for a quick and delicious meal. And sriracha just makes everything better (love it)!

Oh yeah, and I like your biscuit idea...but then again kale salad is always tasty. :)

I think the carrots sautee'd with the sriracha is what did it for me, I love the spicy sweet tang, it was almost, dare I say addictive. I might make jst do some carrots in sriracha next time. My kitchen is almost back to normal, I am just so tired since last week, I was getting the kitchen straight last night and I went to put the dirty kitchen towels in the laundry room and OMG! It is horrifying...Now I know where all laundry goes to die...
