Guess what, I cooked again!!!
Tonight I made my mothers Corn Chowder,which I happen to think is the best dog gone Corn Chowder in the world. It isn't fancy....it isn't hard to make, and you probably have all the ingredients in your fridge and pantry!
Corn, russet potatoes, carrots, yellow onion, and celery with leaves
Corn Chowder
Ingredients:
3 cups celery chopped, with leaves left on
2 cups carrots, peeled and sliced
5 medium potatoes, peeled and cubed
1 large yellow onion, chopped
1-2 tbls. vegan margarine
16 ounces rice milk
1 bag frozen corn
2 cans creamed corn
Parsley, pepper and salt
In a large pot over medium heat add 1 tbls. margarine, carrots, celery, and onion. Cook until crisp tender. Add potatoes and frozen corn and enough water to cover. Bring to a medium simmer. Let cook for about 30 minutes until potatoes can easily poked through with a fork. Now, add your rice milk, remaining margarine, and creamed corn. Turn up heat to medium making sure not to boil your chowder. Cook for about an additional 30 minutes.... Serve with parsley sprinkled over bowl, or just eat it....

Kale salad
Ingredients:
1/2 head of kale, washed and torn
2 large cloves of fresh garlic
1/2 of a lemon that you rolled first (it extracts more juice)
Red sea salt ( I put the salt in an old Tabasco sauce bottle after going to Chipotle Grill)

Cracked black pepper
In a large bowl add your kale and garlic. Now rubbing with your hands, get the garlic all over the kale. Add lemon juice salt and pepper to taste and serve..Delish!
I made some sugar biscuits that I have made for years for the shortcakes, totally vegan, completely delicious....Here is the problem. I was moving things out of the downstairs pantry
and took some trash outside to the bin. Emma came with me and we started singing. Emma and I sing folk songs for fun, we are pretty good, I am an alto and Emma is a soprano, so we can harmonize quite well (if I do say so myself). We finished the last song (we sang about 15 songs outside BTW, (I am sure the neighbors hate us) came in, and I popped the sugar biscuits in the oven and we proceeded to go upstairs to my office.

About 45 minutes later Kaiti came home from school and called up the stairs "Is something in the oven?"............
Thanks to Mushu for posing all afternoon and helping to distract Emma and myself from paying attention to anything!

Your kale salad sounds great. I love that you made it without the typical copious amount of olive oil.
Have you tried adding broken corn cobs to your corn chowder? We learned that in cooking class and it makes a much bigger difference than I expected. It adds a lot of flavor and body to the soup.

VE- I have heard of the broken corn cob thing but never tried it, I think I will do that as soon as I can get some decent fresh corn..come on farmers market!!!

Corn chowder and kale salad...yum! Both are definitely up my alley. I've never made corn chowder and this recipe seems pretty simple.
So sad about the biscuits. Last night, I was roasting a plantain and forgot all about it...the darn thing burnt to a crisp!

I have been very forgetful lately....My laundry is piling up and I was trying to get that under control and I had some pizza dough setting out and I fogt about it and it over proofed, so no buffalo chicken pizza post tonight....tomorrow maybe....lol
