When I was a meat eater I had an explosive recipe collection of mexican and spanish flavors!!!
Paella, Black beans and rice, Sancho's, Burritoes, Carnita's, Cevicha, Enchilada's, (no tamale's please) Corn sopa..you name it, I was there. My husband once asked me why we had mexican food three times a week, I said why not?
I think why I love it so much is the flavor!
It can be piquant, zesty, fiery, mellow and smooth, robust and delicate and that can all be in the same dish!!!
So today, I had no idea what to make for lunch for Chris and to be quite honest, I skip lunch all the time. Today though, I felt was a mexican lunch day and I wanted Sancho's!
Now the sancho is technically a bad thing in Spanish, it means someone that cheats..
But when I worked at Taco Via in Overland Park, Ks. It meant deliciousness in a tortilla!
Sancho's
1 cup water
1 cup tvp
1/4 cup taco seasoning, make sure it is vegan or make your own
Romaine lettuce, shredded
Vegan cheddar cheese, shredded
Fresh tomato, sliced in half and sliced thinly, or fresh tomato salsa
Flour tortilla's
Make your tvp by bringing your 1 cup of water to a boil, add tvp and cook over medium heat until water is looked in. Add your taco seasoning, and stir to combime, you might need to add a touch more water. Remove from heat and assemble your sancho's. Place your "meat" on the center of your burrito shell, top with cheese and microwave for about 30 seconds, top with lettuce and tomato and roll up burrito style...Eat!

I did not have fresh tomatoes, but I did have a can of Organic fire roasted diced tomatoes, so I chopped up a fresh jalepeno' and a half of an onion, with some dried cilantro and red sea salt it was very tasty. Sour cream is not traditional on a sancho, but since I have combed the web about sancho's and found nothing, I guess it can be however you like! I added sour cream and lime wedges to mine! Lime just goes with Mexican food!!!
I think it is time to try my Pork Sancho recipe.........Hmmmmm?
