Tonight I was feeling peckish, I wanted something yummy, but I didn't know what to make. My menu plans are out the window so to speak and we are floating in the unknown. I must make the lists tonight, especially with summer coming!!! Perhaps tomorrow I will post them.

So....on to dinner. I have black beans that I cooked yesterday in the fridge, and I have tvp, and seitan, tons of veggies......but what to eat?
Kaiti suggested rice.....Kaiti always suggests rice. This is what happens when you eat Chinese food for 8 straight months while pregnant....Chinese it is!
Kaiti said we should just eat rice, I said lets make some broccoli to go with it!
Then I got into the refrigerator, and found 1/2 pkg. of firm tofu. I opened the freezer to pull out the broccoli crowns and found some raw cashews....Broccoli,cashew, tofu with basmati? "YES, YES....Kait yelled! But no cashew in mine!"

The recipe is simple just throw everything in a pan and cook.....don't believe me huh? ok ok

This is not a recipe per say, it is what I did, nothing is approximate and I am guessing. This is the way I make Chinese food, just go for it!

Ingredients:
Cooked Basmati rice
1/2pkg. extra firm tofu, cut into a dice
Cornstarch to coat tofu
3 cups broccoli crowns
1 big handful of raw cashews
1/4 c. total, olive oil
1 tbls. Sriracha
1/2 c. Soy sauce
Coat tofu in cornstarch and fry in hot oil until light brown. Add cashews and broccoli. Add soy sauce and sriracha and stir fry together, serve over rice
That is it! Chinese food is pretty forgiving and you really cannot mess it up.

I love it when the lilacs are blooming this time of year. Sooo pretty. YUM on the dinner. Looks fantastic.
Thanks for the lilac reminder. I need to check the bushes at the back of my yard to see if they are blooming.
I make a lot of Asian food too. Stir fry is always a quick meal.

I adore lilacs they are my favorite bush, next to bridal wreath, when it blooms I will take pictures of them too! Chinese is a breeze to cook! Tracie, I ahve never been out of the midwest other than when I went to Washington State when my grandmother was dying. I was land locked there too!!! BOO HOO!!!! I would love to go to Mackinac Island and see the lilac festival. I have been to a tulip festival though and that is beautiful!!!

Your food always looks so good, and from the sound of it you have all kinds of yummies in your fridge!
I love lilac too, but hadn't thought to actually go get some to plant.
Next year maybe, this year I must learn to veggie garden lol.
Chandra, Normally I do not coat the tofu, but I kept hearing about people doing it and how crunchy it is. I tried, and it does get crunchy, but I like tofu natural. Ya gotta try new things sometimes, right?

If you buy soam lilacs, try to get some that have already been rooted in a 2 gallon pot. The lilacs at wal-mart are iffy at best!! Good luck!
