Chickenless Noodle Soup

There is nothing as soul satisfying as soup! In about 20 minutes you can make a huge pot of delicious soup with what ever you find in the cupboard and fridge.

Tonight I am beat. With my illness I have been pretty much MIA when it comes to yard work. But today, I battled my demons and I mowed the entire front yard myself with a push mower. No riders for me baby...(it is in the shop) Totally push.. I thought I was gonna die for sure, but I kept on chugging! We have a 3/4 acre yard, and I mowed half of it!!!
I know it is silly to be proud of yourself over something as simple as yard work, but when you cannot do something....it becomes a big deal!

So for dinner, I made Chicken-less soup and everything bread.

Ridiculously simple, throw whatever you want in a pot and cook.
Here is what I did.

Chicken-less Noodle soup
~
8 cups water flavored with 8 veg. bouillon cubes
1 large onion, chopped
3 large carrots, peeled and sliced into rounds
3 large stalks of celery, sliced
3 garlic cloves, peeled and sliced
1/2 pkg. old fashioned frozen vegan dumplings, separated
Sea salt and Cracked black pepper to taste
Parsley to taste

Cook your carrots, onion, celery and garlic in your pot until softened, you can either water saute or add your choice of vegan margarine or oil. When crisp tender, add water and veg. cubes. Season with salt and pepper, plus parsley. Add your dumplings and cook for about 20 minutes until your noodles are tender. Serve with baked bread.

This was yummy, I ate two big bowls and two pieces of bread!
Tomorrow I am getting out the summer decorations out and start working out the plans for flower bed!
I am so excited to show you what we are planning to do!!!

Brandi, when I first saw your post, I literally said, "Oooh." That looks good and warm and yummy. But, how could I have missed two other posts? Sorry, girl. You typed faster than I could check online. They all look good, though. :)

Chris doesn't like soup?! Total bummer. Come to think of it, my Jordan never asks for soup either. Is it a guy thing? Hmmmm...

You know I love soup! Yours looks good Brandi! Love you! And good job, about the lawn mowing! Easy or not, I think it is definitely something to be proud of! :)

What a beautiful hearty soup. I REALLY love soup, in fact I'm making some tonight. I think this recipe is going to have to be next on my 'to make' list because it really looks delicious.

Soup is always a winner and this chickenless version of the old classic looks great. And props on mowing the lawn with a manual mower. You're a superwoman!

that looks like the perfect soup to battle illness. instead of vegan dumplings, I think I would use those dried soy bunches you can find at an Asian market for really cheap. they hydrate in the soup and are like a thinner dumpling with a great taste.
