A nasty, nose running, head achy, lethargic, yucky, nasty cold......
Chris has been suffering with a cold for the last week and luckily I caught it(sarcasm!!)
I have no appetite, yet I am hungry. I have no will to move, yet I move.....I am miserable!
Yesterday I laid on the couch all day and watched CSI reruns on TV.....LAME!
Today it is on to bill paying and picking up some groceries....
I am craving brothy things. Last night I threw together black bean soup and it was really good. I made some tortilla strips for the girls, and left mine plan, totally E2L approved
Black Bean soup
3 cups, black beans, soaked and cooked
2 cups fresh salsa
4 cups vegetable broth, homemade or canned
Fresh corn, shucked
3 tbls. Alicia's sour cream with chives added
black olives for garnish, sliced
avocado for garnish, diced
Cumin, black pepper, chili powder, sea salt to taste
Throw everything into a pot, except soup cream avocado or olives. Cook for about 45 minutes. Top each bowl with some sour cream and olives. Tortilla strips opt.
On a side note:
E2L is killing me...I am crabby and headachy, I feel nasty from detoxing and just generally in a funk...
I am proud of myself for making it 5 days without to many mishaps.. Next week I am hoping to be less crabby and more focused..I have literally been dreaming about pie and potato chips. I swear I almost ate 3 slices of cinnamon toast last night. Luckily a fever hit me, so no toast for me.....Is that weird to say luckily a fever hit me??? I though so too..
Well, I hope everyone's day is pleasant and fever free. I am looking forward to a leisurely weekend and some good food....(that I won't be eating) and spending time with family!!
Hope you have a nice memorial day~

Brandi,
I am so sorry you caught the cold Chris has been struggling with. I hope it passes quickly.
Nice looking soup! It looks perfect. :-)
The first couple of weeks on Eat to Live are tough. It really will get better. I feel so good now I can't imagine going back. But I also had the symptoms you describe at the beginning.
big hugs,
Ali
Hi Brandi,
I totally agree with Ali. Everyone feels awful at first on E2L and it's just too bad you got stuck with a cold as well. But if you stick with it it will get better, for sure.
Mariann
Sorry to hear you are sick. :(
Yes detox is miserable.
The cravings do go away. :)
Your black bean soup looks sooo gooood!! I know it was delicious. :)
I hope you feel better, and enjoy your weekend.
Just wanted to say well done on starting your new eating regime. Hope the the detox symptoms don't last too long.
I've mentioned before that I'm not vegan but your blog is inspiring me to be more mindful of what I put into my body.
2 weeks ago I stopped eating anything containing sugar, sugar substitutes and white flour. That's all I've done and I've lost 8lbs without trying! And I feel really really good.
Next stage is cutting out caffeine but I really like herbal teas anyway. Even DH drinks peppermint tea sometimes.
I showed DH your blog and he said 'Why is she a VICIOUS vegan?' Lol!
ABSOLUTELY SCRUMPTIOUS!

Ahhh ... I hope you feel better soon ... there's not much worse than a spring/summer cold ... just miserable!
Your Black Bean Soup looks wonderful ... it's making my mouth water!
I've got to go and check out this E2L thing ... sounds fascinating ... and tough!
Hope you'll feel better soon and will be able to enjoy the weekend.
I started E2L and BAM! Same illness as you describe!
Not grumpy or cranky, just head cold-like misery and fatigue.
Anyone else out there with the same experience?
At first, I thought it was allergies/hay fever - then a head cold - it has been going on for 10 days now. (Although I felt considerable "better" around the 4th day).
Years ago, I went on "The South Beach Diet" and I was sooooo crabby that people were throwing bread at me, begging me to eat!!
Hope you feel better soon.
That soup look DIVINE!
Teresa
Ali,
I am still struggling with the blah feeling, I haven't eaten much a "sandwich" of lettuce, tomato, "mayo" onion and garlic, it worked. For dinner tomato soup with some onion and raw broccoli salad....I have loaded myself with water..Thank you for the well wishes!!
Mariann- I am banking on this working! It just has to work. I have suffered with my illness for so ling, this is my last resort... Wish me luck!
Naina- I am so glad you liked my soup! It was so darn good! I am going to make it often, as it is so simple and flavorful!
Allybea- I am proud of you that you got rid of the icky stuff, white flour and sugars are poison and it is amazing what will happen when we get rid of the toxins in body isn't it! I drink a ton of peppermint tea. I also drink organic jasmine tea, it is my absolute favorite and I drink a literal ton of it! Grren tea is excellent for you and if you want to switch it up sometimes get some raspberry, it is scrumptious!!!
Tell DH, I am vicious because I cannot eat my beloved bread anymore...lol
Millie, I thought you might like this recipe!!! :)
Small footprints- Hi!
E2L is a phenomenal plan that really does change lives. If you would like more information and recipes go check out Alicia's blog @ veganepicurean.blogspot.com
All of her recipes are E2L approved and she knows more about the plan than Dr. Fuhrman I think..lol She helps me alot!!
I am glad you liked the soup!
Teresa- Detox sucks and I hate it. I have detoxed before and it was so much worse than this, so I shouldn't be so grumbly, but then that wouldn't be much fun! You described detox perfectly! Isn;t funny how people will unwittingly tempt you with food to shut you up when you give something up? LOL
My family told me the last time detoxed that if I did not eat a piece of cheese, they would force feed it to me. I skipped the cheese, shut up and quit whining and became a vegan 10 years ago!!
I am so happy you like the soup!!!
Looks delicious!
Peace :)
