Peanut Butter Cookie Day!!!

Before being a vegan, you could not get me anywhere near a peanut butter cookie. There was nothing I liked about the darn things. Now that I am a vegan, for some strange reason I crave them about once a month.
While I have been straying from sugary stuff.....sometimes a girl just needs a cookie!


The world's Easiest Peanut Butter Cookie Recipe!

Ingredients:

1 cup all natural peanut butter

1 egg replacer, follow directions on package

1 cup Organic cane sugar

Preheat oven to 350 degree's.

Mix together your egg replacer in a medium sized bowl. Add peanut butter and sugar. Mix until it forms a dough. Roll into balls about the size of a large gum ball and then roll into cane sugar, place on cookie sheet.

With a glass flatten your dough into disks, dipping your glass bottom into the rolling sugar to prevent them sticking.
Score them into the traditional fork pattern, so beloved by children and adults everywhere!
Bake for about 8-10 minutes or until light brown in color. Let cool completely, these are dainty little cookies and will crumble if not cooled enough. Makes about two dozen nice sized cookies.

That is a simple recipe, great! There's just something about those fork lines on the cookies that makes mouths water ;-)

We are on the same wave length today. I was thinking about peanut butter cookies earlier and I haven't had one in at least a year. I almost think I can smell them. LOL.

Ok, I am so sorry, I have been sick. Thank you for all the comments.
I really do love these cookies and they are super simple to make, please try them, but let them cool completely before removing off of the baking sheet, they are really, really delicate... I broke about a dozen....lol

Wow, does that really just take three ingredients?
That's amazing- but do they not get too hard to remove from even a non-stick baking sheet?
