While I have been straying from sugary stuff.....sometimes a girl just needs a cookie!
1 cup all natural peanut butter
1 egg replacer, follow directions on package
1 cup Organic cane sugar
Preheat oven to 350 degree's.
Mix together your egg replacer in a medium sized bowl. Add peanut butter and sugar. Mix until it forms a dough. Roll into balls about the size of a large gum ball and then roll into cane sugar, place on cookie sheet.With a glass flatten your dough into disks, dipping your glass bottom into the rolling sugar to prevent them sticking.
Bake for about 8-10 minutes or until light brown in color. Let cool completely, these are dainty little cookies and will crumble if not cooled enough. Makes about two dozen nice sized cookies.
