Early morning Kale smoothie

Good Morning Bloggers!
I am hoping all of you are enjoying this cool weather we are getting! I woke up today, read some blogs I have been neglecting and went for a 4 mile stroll. When I got back I decided I needed somthing cool and refreshing as my walk had been. Enter the kale smoothie. If you haven't tried kale yet, you really should give it a go! Kale is so healthy and good for you that it really is a shame not to eat it, or in this case drink it!
I love, love, love colcannon, kale truly makes this dish outstanding and being of Irish descent it really is in my blood to eat hearty foods that will stick with me all day, and it used to....On my hips, and my midsection, and my arms too!
Now I make a more nutritious colcannon using cauliflower and parsnip as the base.
Not too shabby!
I think I will make some colcannon tonight along with some sliced tomatoes and possibly corn on the cob!!

I am having a kaley day! LOL

Kale Smoothies

1 bunch of washed and trimmed kale (any type will work)
4 granny smith apples, cored
4 tbls. lemon juice, freshly squeezed
2 Nectarines, pitted.

Throw everything in your vitamix and whirl for about 2-3 minutes until everything is blended. You can add stevia if you wish, but I usually just use older nectarines for the increase in natural sugars.

I usually follow this up an hour later with a cinnamon apple raw oatmeal. So tasty, and good for you!

Good for you doing 4 miles this morning. You go girl!

That smoothie does sound healthy. Just for curiousity how much is a bunch of kale in terms of leaves or cups, any guess on that?

Love the sound of colcannon with caulifower. Brilliant idea thanks for sharing it. :-)

Smoothies are the greatest. Add a nectarine, as you did , and you can't go wrong.
