Fried rice and banana smoothies

Hello Blogsters.

I do not have any pictures today, sorry.

I am very busy and trying to get multiple things done at the same time, so you can imagine what it is like at the Vivacious household.

Emma is getting married and moving out next week.

The following month I have a baby shower I am hosting and have out of town guests staying at my home for 4 days. I am also switching the house from summer decorations into fall and trying to put together an extra guest bedroom for the inlaws to stay in during their trip.

Of course we have the usual things to do too.

Mowing and car repair, decorating Emma's new house, my best friend just started foster care for two young boys, not to mention I am babysitting for my friend who just adopted a brand new baby 3 months ago. Hectic Hectic Hectic!!!!!



I think that is enough excuses for today, I am sure you get my drift.



This morning while I talked (Ranted is more like it) on the phone to Alicia, you can read her here.

I made Emma a two layer white cake with home made strawberry frosting for a dinner party, fried rice for Chris and I's lunch, prepped veggies for dinner and cut up a cantaloupe and cleaned out the chest freezer. I am sure Alicia appreciated all the noise in the background. I especially liked it when Ali, stopped in the middle of her sentance to say " are you beating eggs" in a quizzical tone! I almost laughed out loud. I still cook meat and a normal "SAD" diet for the majority of my family. I am the last hold out now. Kaiti still eats a mainly vegan diet but she succumbs under the pressures for teenagedness and McDonalds.

I wish I had thought to take a picture of our lunch as it really was quite lovely. I do not know why I wanted a banana smoothie to go with an asian dish, but Chris and I thought it was delicious!



Fried Rice
2 cups day old brown rice or in my case 6 days (it was fine don't freak out)
3 cups of celery, carrots, broccoli, onion and water chestnuts
4oz. cubed leftover marinated tofu from a seperate dinner

1 large garlic clove, minced
Soy Sauce or Tamari

Water for pan frying



Heat your skillet to an insane heat.

Add water and all veggies and stirfry for two minute, dump in rice and cook until heated through. Splash in some soy sauce. Add tofu and cover for three minutes to heat through and serve.

Ridiculously simple. I like a higher vegetable count to my rice as I do not eat rice very often and prefer the veggie crunch to the texture of brown rice. I actually hate brown rice...

Served a hungry man and a cupful for his wife.



Banana smoothies



3 large banana's

1 cup of almond milk (homemade is best)

1 tlbs. oatmeal for froth



Throw everything in a blender and whip for about 30 seconds. Throw in a handful of ice (unless you have froze banana's) Serve at once. This made a large glass for Chris and a small ball jar size for me.

I do love fried or in this case "unfried" rice. That has been one of my favorite dishes for years.

You weren't ranting much. ;-) Plus I completely understood why you not yourself.
