The Vegan Tummy's, Cannellini bean soup with garlic and an Award!

Well lets start this blog about soup shall we?
But, might I interest you in admiring my handsome boy for a moment? Yes, Yes.....look at him! He is adorable! And yes, this ladder sits in my yellow room year round just for Mushu....I am so whipped. LOL
This is my late night dinner of an orange, banana smoothie. Yes I know not a great dinner, but sometimes you just want something light. This is just 2 whole oranges, 2 banana's, 16 oz. ice and enough water to make it move.
So, The Vegan Tummy sent me two different soups to pick from for this competition, since I am such a fan of garlic I had to try the Canenellini bean soup with garlic.
As you can see, I made my own substitute for the commercial broth!

The Vegan Tummy's Cannellini Bean Soup with Garlic (original version)
1 - 2 T. olive oil
1 onion, diced (1 Cup)
6 C. water
3 vegan bouillon cubes
2 medium sized russet potatoes, diced (1 1/2 - 2 Cups)
1 C. chopped cauliflower
1 whole bulb of garlic, separated and peeled
1 bay leaf
4 sprigs thyme
4 15.5 oz. cans of cannellini beans, rinsed and drained
1/4 t. white pepper
1/4 C. parsley, chopped
cheesecloth and kitchen string

In a large stock pot, saute the onion in olive oil for 5 minutes. Add water and bouillon cubes and bring to a simmer. Tie the garlic, bay leaf and thyme in a piece of cheesecloth and place into the simmering stock. Add the potatoes and cauliflower and simmer for 30 minutes. Remove the cheesecloth bundle and discard. Add the beans and puree half the soup in a blender then stir back into the pot. Add the parsley, pepper and enjoy!

What I did different.
I made my own broth.
I omitted the oil and water sauteed the veggies.
I omitted the potatoes, as I rarely eat them.
I kept all the garlic and blended it in with the beans.
I used an immersion blender in the pot instead of pouring my hot soup in the blender.

This soup is really good and was enjoyed by vegans and omni's alike. I think I will roast the garlic next time to bump up the flavor since I use no salt or oil. I will make this again!

I am really enjoying this competition alot. It is exciting to try soups I might have never tried and the prep work is right up my alley!

Immersion blender! Great idea -- You know, I think I have one in the bowels of my upper cabinets I can't reach without climbing on something! I love blended soups and have been doing it the hard way. Funny how one can get in a rut and forget about thinking outside the box. Duh.

I just bougth one at a garage sale over last summer and I thought, why the heck not! It worked great without any mess or burns...lol

Yum that soup sounds good especially with that cauliflower! Good idea water sauteing them. I like the sound of your smoothie. Sounds like an orange julious. And I am also whipped by all my animals. They are so spoiled.

Thanks for the award! Yay! I love learning new things about other bloggers. I think it's funny how you know random info like that. I am semi like that too. I'll say something like, did you know.....etc? And everyone just stares like, why would you know that? Oh and wow!!! You read them all 10 time! Bravo!!! I really should read them then. Are you into Lord of the Rings as well? I love them.

Thank you for the award! I read this post last week, but we have been going through flu - sort of one or two at a time, which really draws it out...and then I had a big birthday party to execute. Today is my first day to sit down and write at the computer. So, thank you! And I'll get my follow-up post as soon as possible. I like your list. #6 is interesting. Bless your Mama. And I so wish I was like #5. I can walk away and cozy up into bed without another thought of how messy the kitchen counters are.
