How is it July 11th already?

Hello!
How are you today? I feel pretty good. I have been awfully busy for the past few weeks. We have done some traveling for the 4th of July holiday, cleaned the house a few times, and I have also been trying to keep my flower gardens going.
The heat here in Kansas is a nasty thing come July and August! I almost lost my tomato garden! Thank goodness, I hopped to it and got on it!

I have been in a baking mood lately and the flavor of the month seems to be pumpkin. Go figure! Maybe it is because my heart belongs to the fall, or all the pinners I have on Pinterest have fall on the brain and keep posting apple cider and pumpkin recipes~
The above picture is right before I baked them, but I thought it was so pretty!

So, here is a fairly simple Pumpkin Scone that I think you will love!


Better than Starbucks pumpkin scones!
        
Ingredients
    For the Scones
  • 2 cups all purpose flour
  • 1/2 Tbsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1 Tbsp granulated sugar
  • 1 Tbsp brown sugar
  • 1/4 cup vegan butter or margarine
  • 1/3 cup pumpkin puree
  • 1/3 cup almond milk
  • For the Cinnamon Icing
  • 1/4 cup powdered sugar
  • 1/2 Tbsp almond milk
  • Cinnamon & nutmeg to taste
  • For the Pumpkin Spice Icing
  • 1/4 cup powdered sugar
  • 1 tsp almond milk
  • 1 tsp pumpkin puree
  • Cinnamon & ground cloves to taste
Instructions
    For the Scones
  1. Mix together dry ingredients.
  2. Cut in cold margarine. If your dough gets too warm at any point, stick it in the fridge.
  3. Stir in milk and pumpkin puree.
  4. Mix until ball of dough forms. You'll likely need to use your hands as it will be dry at first.
  5. Roll dough into rectangle. Slice into triangles.
  6. Bake at 375 for 12 minutes.
  7. For the Icings
  8. Mix all ingredients together. Adjust amount of milk to achieve desired thickness. If only using one icing, double the recipe.
When the scones have finished baking, drizzle the cinnamon icing over the scone and allow to harden. When the first icing is set, take the pumpkin spice icing and place it in a piping bag with a small writing tip then in a back and forth in a zig zag motion ice the scones.
 They will be very pretty and you won't want to eat it, but go ahead and take a bite, your going to love it!  What have you been doing this summer? Anything fun?

This looks very good as a treat! I love pumpkin. I have often thought that those Starbucks treats look pretty, but that they look kind of fakish like they wouldn't taste good. But I've never tried them so I don't know. Love their vegan mochas though! :)
